Anyway back to the can of cherries. When I resort to canned cherry pie filling I usually purchase the premium ones because they are at least packed with sugar and not high fructose corn syrup. Target also sells their Market Pantry brand that tastes very good and does not contain high fructose corn syrup. These Lip Smacking Good Cherry Pie Crumble Bars can be prepped in about 15 minutes. They are best served warm or at room temperature. They can be stored for several days in the fridge and gently warmed up in the microwave at a reduced power.
TIPS FOR MAKING CHERRY PIE BARS
- If at all possible use premium cherry pie filling or better yet fresh if you have the fruit and the time.
- Butter is absolutely essential for making the crust and crumble taste perfectly delicious.
- Use pure vanilla and almond extract. It is well worth the added expense.
- Old fashioned rolled oats add a touch of chewiness and texture to the topping. Try to avoid quick oats as they are partially cooked, dried, and then rolled and pressed thinner.
- You can easily substitute apple, blackberry, blueberry, peach or apricot pie filling. As my late mother used to say to each his own.
- Bake the bars until the edges are bubbling with fruit and the top is very light browned. If desired turn the broiler on low for the last minute of cooking to get a crispier topping. I always recommend that you stay very close by while using the broiler as they are unpredictable especially on older stoves.
